Notes COLD brew steeping will result in less tannin, and thereby less acidic tasting. Be sure to cover steeping container tightly to avoid tea from absorbing other food aromas in the refrigerator. Strain and enjoy your cold-brew tea. Crushed ice and sweetener can be added per serving if desired. If adding ice, make cold brew double concentrated since adding ice will dilute the tea.
In 1833, Earl Grey (Earl of Howick Hall) was the British Prime Minister at the time. He suspended the price monopoly, which the East India Company had over the tea trade with China. The originally pure Chinese tea was lightly flavored with fine Bergamot oil. This additional fragrance, which was provided by the Chinese, and was intended to protect the tea from the taste of mold and tar that occurred from the long voyage at sea to England. Thus, this tea received its name Earl Grey and is still used to this day. This tea is the embodiment of the finest English tea.
